It's been coming for some time and I hear there will be dragons. In any case, it meas that Christmas is coming too and there is a need for Christmas cookies at such time. I liked the mince pies I made last year so I will be making those again but I wanted to bake something easy as well. Sugar cookies are practically the easiest type of cookies but for the special occasion I wanted them special too. Using a lot of pistacio nuts and dried lingonberries made the plain chewy cookies special and added great mix of flavor to the usually plain sweetness of sugar cookies.
Pistacio-lingonberry Sugar Cookies
for about 20 cookies you will need:
- 175g butter, softened
- 85g brown sugar
- half a teaspoon of vanilla extract
- 225g all-purpose flour
- 75g pistacio nuts, unsalted
- 75g dried lingonberries
- Beat the butter with sugar and the vanilla extract until soft and fluffy. Stir in the flour and add the nuts and berries. The dough will get quite tough so you might want to use your hand to incorporate everything.
- Divide the dough into two and roll each part into 5cm thick cylinder. Wrap them tightly in celophane and let rest in a fridge for about an hour or up to a month.
- Preheat the oven to 180° C. Cut the dough into about 1cm thick discs, place on a baking sheet and bake for about 12 to 15 minutes.
