Banana Chocolate Chip muffins

I bought 6 silicone muffin cases so that I might do some muffin baking at home in my remoska. Even though only 3 fit inside at a time, I made a small batch of six to test things out and hell yeah! It worked!
A new age has dawned upon my kitchen.

Anyway, I know I didn't discover America by combining banana and chocolate. This pair is bested only by chocolate and cherry combo (as many ice-cream companies have noticed) which is something I should combine in about two months when the season is right. But for now - banana and chocolate chip muffins.

Banana Chocolate Chip muffins

for 12 muffins you will need:
  • 250g flour
  • 100g white sugar
  • 120ml milk
  • 60g butter
  • 2 eggs
  • 2 ripe bananas
  • a pinch of salt
  • a teaspoon of baking powder
  • a teaspoon of vanilla extract
  • 125g bittersweet chocolate or chocolate chip
  1. Preheat the oven to 200 degrees Celsius, line up a muffin tray with 12 paper cases. If you have a chocolate bar, chop it into small pieces. Melt butter and set aside. Mash the bananas until nice and smooth.
  2. Combine flour, sugar, salt and the baking powder in a bowl and make a well in the middle.
  3. Using a whisk or a fork, beat the eggs slightly, stir in the butter and milk and the vanilla extract.
  4. Gently stir the liquid part into the flour mixture, add the mashed bananas and mix until just combined. Fold in the chocolate chips.
  5. Spoon the dough into the paper cases. Bake for about 20 minutes or until risen and baked inside (you can check by inserting a toothpick in the middle of a muffin - if it comes out clean, it's done). Leave in the tray for couple minutes, then transfer onto a wire rack to cool.
