Rainbow White Chocolate Brownies


This Saturday marks the second time that there will be a Pride event held in Prague. To celebrate diversity and a little extravagance I've decided to prepare a batch of rainbow coloured brownies since I had to do it before the weekend and brownies are so easy to make, they were perfect for a last minute baking project.

I wasn't nervous about using the food colouring as it wasn't my first time working with it (that would be the cute heart muffins) but I hoped the colours wouldn't mix and spoil the result. Eventually, that didn't happen and the colours stayed separated, layered and the brownies looked great when cut.

There's 6 colours to the LBGT flag and colouring 6 batches of dough turned out to be quite lengthy. I suggest you start preheating the oven halfway.


Rainbow White Chocolate Brownies

  • 200g white chocolate
  • 85g butter
  • 2 eggs
  • 75g white sugar
  • 125g flour
  • 2 teaspoons of vanilla extract
  • food colourings of choice
It looks like paint colours!
  1. First double boil the white chocolate with the butter. After it has melted, let it cool but keep mixing so it doesn't get solid again. Add the sugar and eggs and mix until it is smooth and well incorporated.
  2. Add in the flour and the vanilla extract and stir until there are to flour lumps in it.
  3. Grease a 20x20cm baking pan and preheat your oven to 180°C.
  4. Depending on how many colours you have, pour the batter in a relative number of bowls and add the food colouring and mix until you get the desired colour.
  5. Once you have the batter ready, pour the first batch in the pan. Then pour the second but try your best not to mix it - if you are careful, the colours won't combine and that is what you want. Otherwise you will get an unsightly brown. Also try not to catch air under the layers. Unsightly bubbles would form you'd be left with singed bumps on the top.
  6. Pour in other colours carefully and once they are all in and you feel brave enough, you can make swirls in the mix with a fork but be quick about it and don't overdo it or you'll get the brown.
  7. Bake for about 30 minutes or when the toothpick comes out clean of the center and the edges are slightly brown.
  8. Let it cool in the pan before you cut them and serve and don't forget to cut off the brown edges.
